I Made It!

Something relatively quick, easy, and cheap today. I made:

Tomato-Garlic Soup

tomato-garlic soup. There’s pretty much nothing to it: chop a small onion and three or four small carrots (or one of those monster carrots you often find in the supermarkets these days). Put three tablespoons of olive oil into a pot and heat until just barely smoking. Add the onions and carrots to the oil, along with two tablespoons of minced garlic and two tablespoons of tomato paste and sautee for five to seven minutes. Add a 28-ounce can of diced tomatoes, and a little less than one can’s volume of water. Bring it to a boil, lower the heat, and simmer, covered, for a little over half an hour.
